Men-ya Mufu

The Story of
Men-ya Mufu

Men-ya Mufu is a restaurant that could only be built by someone who had already succeeded -- and chosen to start over. Owner Satoru Nakamura spent more than 25 years in the ramen industry, eventually growing his own Osaka-based ramen brand to ten locations. The business thrived. And then he made a decision almost no one in the industry understood: he sold everything and walked away.

What came next was Men-ya Mufu, opened in a quiet town in Wakayama Prefecture far from the competitive Osaka ramen scene. The concept was stripped back to fundamentals: no additives, natural ingredients only, and a clean chicken-based broth that feels gentle on the body while delivering genuine depth of flavor. Nakamura wanted to challenge the assumption that ramen must be heavy or sodium-laden to satisfy.

The menu at Men-ya Mufu pushes further than the broth alone. Truffle Ramen, Hot Chili Ramen, and Basil Ramen exist not as novelties, but as carefully composed expressions of the same clean, clear culinary philosophy. Each flavor is built with balance first. The result is a ramen that rewards attention -- and draws guests from across Japan, despite the restaurant's remote location. Limited release bowls create lines from the night before.

The name Mufu (夢風), meaning “wind of dreams” in Japanese, reflects the owner’s vision of sharing his ramen with the world, carrying flavors shaped by personal conviction beyond borders while staying true to what he genuinely believes in.

Men-ya Mufu joins YUU Japanese Food Hall, bringing its additive-free, deeply personal ramen to U.S. diners for the first time. This is ramen made to be cherished -- slowly, thoughtfully, and for a long time.

I spent 25 years building a ramen business in Osaka, grew it to ten locations, and then walked
away. What I wanted to make was something I could truly stand behind — ramen with no additives, made from natural ingredients, kind to the body and honest in its flavor. Men-ya Mufu is that ramen. I hope you feel the difference.
— Satoru Nakamura, Owner, Men-ya Mufu
