Tucked in the heart of Osaka, this Michelin Bib Gourmand-recognized restaurant has quietly been rewriting the rules of Neapolitan pizza with a distinctly Japanese sensibility. At the helm is Ryohei Onishi, an owner-chef who spent a decade mastering Japanese, Chinese, Spanish, and Italian cooking before a chance encounter with a pizza master in Okinawa changed everything.
The philosophy at BODEGA is deceptively simple: one pizza, one person, one moment of pure satisfaction. Every pizza is crafted for solo enjoyment, rooted in Neapolitan tradition but elevated with Japanese precision. Onishi refuses to cut corners. The dough is made from organic, non-GMO flour sourced from Hokkaido, Japan's northernmost island known for its pristine agricultural heritage. No additives. No shortcuts. Just honest flour, water, and obsession.
